There is no better time to make fun and creative food for your family than April Fool’s Day. We curated a perfect full-day menu your family will love. Bring on the giggles and fun with ease this April Fool’s Day. 

Breakfast: Breakfast “Pizza” 

You can finally say yes to pizza for breakfast, feel good about it, and have a great start to April Fool’s Day with this waffle pizza.  

Ingredients: 

  • 1 box Food Club buttermilk waffles 

  • Food Club strawberry preserves 

  • Food Club sweetened coconut flakes 

  • 1 container of strawberries 

  • Optional: pistachios or mint for topping 

Instructions: 

  1. Heat your waffles according to the package instructions. 

  2. Spread the strawberry jam on the waffles as “sauce”. 

  3. Sprinkle the coconut on top of the jam as “cheese”. 

  4. Slice your strawberries in rounds and place them on the waffle as “pepperoni”. 

  5. Optional: Chop pistachios or cut up mint and sprinkle on top as a garnish for your pizza. 

  6. Enjoy! 

Lunch: Snake Sub 

Serve up some fun with this snake sub.  

Ingredients: 

  1. 1 sub sandwich (either from our deli or make one at home) 

  2. 1 cucumber 

  3. 1 red bell pepper 

  4. 1 can Food Club sliced olives. 

  5. Food Club pretzel sticks 

Instructions: 

  1. Prepare your sub sandwich like normal if applicable. 

  2. Slice your cucumber into circles. 

  3. Cut your red bell pepper into strips and cut out a triangle at the end to make a “tongue.” 

  4. On the top slice of your sub bread, place two cucumber slices at the front for “eyes”. 

  5. Place the olives on top of the cucumber slices. 

  6. Secure the cucumbers and olives by putting a pretzel stick through them and into the bread. 

  7. Place your red pepper tongue at the end of the sandwich to finish the face. 

Dinner: Shepherd’s Pie Cupcakes 

Did someone say dessert for dinner? These shepherd’s pie cupcakes are sure to make your family smile. 

Ingredients: 

  • 1 box Food Club pre-made pie crust dough 

  • ½ lb. lean ground beef 

  • 1 small onion, chopped (1/2 cup) 

  • 4 teaspoons all-purpose flour 

  • ¾ cup Food Club beef broth 

  • ½ teaspoon salt 

  • 1/8 teaspoon pepper 

  • 1, 12 oz package Food Club frozen mixed vegetables 

  • 2, 13 oz boxes Food Club instant mashed potatoes 

Instructions: 

  1. Cook your mashed potatoes according to the package instructions. Allow the potatoes to cool down before chilling them in your fridge.  

  2. Preheat your oven to 375°F. 

  3. Lightly flour your surface and roll out your pie dough to be ¼ inch thick.  

  4. Cut 4-inch circles into your pie dough using a cutter or cup. 

  5. Press your 4-inch dough circles into each muffin cup compartment, flour side down. 

  6. Bake 9-11 minutes or until slightly browned. 

  7. While the dough cooks, cook your beef and onion in a pan over medium-high heat until beef is fully cooked. 

  8. Drain your beef and onions and return to the stove. Add your flour and mix until combined. 

  9. Add your broth, salt, and pepper. 

  10. Cook for another 2 minutes or until the mixture thickens. 

  11. Once the mixture is thick, add your frozen vegetables. 

  12. Cook until vegetables are heated through, about 2 minutes. 

  13. Fill each muffin compartment with your beef filling, about ¼ cup for each. 

  14. Fill a piping bag or plastic bag with your mashed potatoes. (a frosting tip is optional but will make the pies look more like cupcakes) 

  15. Pipe the mashed potatoes onto each muffin compartment like a cupcake. 

  16. Place the mini pies into the oven and bake for about 20-25 minutes or until the potatoes are slightly browned. 

  17. Allow the pies to cool slightly before removing them from the pan and serving.  

Dessert: Spaghetti Ice Cream 

The best way to end a great April Fool’s Day is with a crazy dessert, and what is crazier than an ice cream sundae that looks like spaghetti. 

Ingredients: 

  • 1 carton of Red Button Vintage Creamery vanilla bean ice cream 

  • 1 container Food Club whipped topping 

  • 1 can Food Club strawberry or cherry pie filling 

  • Food Club sweetened coconut flakes or Food Club white baking chips 

  • Optional: cookies or wafers for garnish 

Instructions: 

  1. Place your serving plates and ricer (if you have one) in your freezer. The ice cream melts very fast, this will help slow that process. 

  2. Blend your pie filling until smooth. 

  3. Allow your ice cream to become a bit soft. Not too soft that the ice cream melts but soft enough that it will go through the ricer or plastic bag easily. This is best done by keeping your ice cream in your fridge for about 5 minutes. 

  4. Place a large spoonful of whipped topping on your serving plates. 

  5. Put your ice cream through your ricer and squeeze over the whipped topping. If you do not have a ricer you can use a plastic bag and cut a small hole in the corner.  

  6. Top the ice cream noodles with your blended pie filling. 

  7. Sprinkle your coconut or white baking chips over the top. 

  8. Add your cookies or wafers if you have them and serve!
